ATÚN CON PIMIENTOS





Ingredientes
- Atún (o bonito)
- Cebolla
- Tomate maduro
- Pimientos rojos y verdes
- Vino blanco
- Tomillo
- Laurel
- Sal
- Pimienta
- Aceite de oliva

1. Verduras
Por un lado, se cortan en tiritas más o menos finas la cebolla y los pimientos que vayamos a usar (mejor si cogemos de las dos clases, ya que además de hacer el plato más sabroso, lo hace más vistoso), y se fríen en una sartén con un poco de aceite hasta que la cebolla se ponga transparente.
Por otro lado, se pela el tomate y se corta a daditos (sin simientes), se añade al sofrito y se mezclan todos estos ingredientes.

2. Aderezo y pescado
A continuación se añade un buen vaso de vino blanco, un puñadito de sal, pimienta y las hierbas aromáticas (tomillo y una hoja de laurel), y se deja cocer todo durante unos 15 minutos. Y por último, añade los filetes de atún y deja que se cueza todo unos 10 minutos más a fuego lento. Un guiso rápido, delicioso y colorido!

NOTA: Si te gusta "hacer barquitos con el pan", tapa la sartén mientras se cuece el guiso para que no se evapore toda esa salsita.

- Tuna (or bonito)
- Onion
- Ripe tomato
- Green and red peppers
- White wine
- Thyme
- Bay leaf
- Salt
- Ground black pepper
- Olive oil

1. Vegetables
On the one hand, cut into strips the onion, and the red and green peppers (it will be more flavourful and more eye-catching because of the different colours); then, fry slightly in a pan with a little olive oil until onion is translucent.
On the other hand, peel the tomato and cut into dices (without seeds), add into the frying pan and mix all the ingredients.

2. Dressing & fish
Next, add a good glass of white wine, a handful of salt, ground black pepper and the aromatic herbs (thyme and a bay leaf), and leave everything to cook for about 15 minutes. Finally, add the fish fillets (tuna or bonito) and let the stew simmer for 10 minutes. It's a quick stew, delighful and colourful! 

NOTA: If you like to dip your bread into the sauce, you should cover the frying pan while the stew is being cooked to avoid the evaporation.

SALMÓN AL HORNO O SALMÓN EN HOJALDRE (1 entrada, 2 recetas)


Esta primera fotografía pertenece a uno de los trozos del salmón que preparamos para la cena de Nochevieja. Para que os hagáis una idea de la dimensión del plato, se utilizó una lámina de hojaldre entera para envolverlo. Dispuesta a repetir la receta, con los filetes de salmón que tenía, que eran mucho más finos, preparé tres raciones individuales (y el resultado fue igual de delicioso). Además, si no disponéis de hojaldre podéis quedaros con los pasos 1 y 2, y preparar un sencillo salmón al horno.

Hoy, como recomendación adicional, y ya que el protagonista de la receta de hoy es el salmón, os propongo una "deliciosa" película protagonizada por Emily Blunt e Ewan McGregor y que se titula: "La pesca del salmón en Yemen".



Comenzamos:









Ingredientes
- Salmón fresco (limpio, sin espinas)
- Eneldo
- Tomillo
- Pimienta negra molida
- Limón
- Sal
- Aceite de oliva
- Lámina de hojaldre

1. Aderezar el salmón
Colocamos los filetes de salmón sobre un papel vegetal en una bandeja de horno (no importa si tiene piel, porque después será más fácil quitársela), añadimos unas gotas de aceite de oliva, y los cubrimos con las especias que queramos (en este caso, eneldo, tomillo y pimienta), y por último, colocamos unas rodajas de limón.

2. Primer horneado
Es el turno de hornear el salmón, la temperatura del horno deberá ser de unos 180ºC y el tiempo que necesitemos dependerá del tamaño que tengan nuestros filetes y también de cómo vayamos a tomarlo (porque si nos vamos a quedar en este paso, el salmón necesitará más tiempo que si después vamos a envolverlo con el hojaldre). En este caso concreto, y para seguir con la receta completa, necesité unos 20-25 minutos.

Si os plantáis aquí, no dejéis que se enfríe e hincarle el diente cuanto antes (RECETA 1); en cambio, si lo vais a envolver, es preferible dejarlo enfriar (para que sea más fácil despegar la piel y también evitar que se desmenuce al ponerlo sobre el hojaldre).

3. Envolver las porciones de salmón
Antes de envolver el salmón, corté las porciones por la mitad con el fin montar una sobre otra y que quedaran más gorditas y jugosas. Así, sobre la lámina de hojaldre coloqué los dos trocitos de pescado con la cara de las especias hacia abajo (para que después de envolverlas, al darle la vuelta, queden derechas y la unión del hojaldre hacia abajo, tal y como se muestran en las fotos).

4. Segundo horneado
Por último se vuelve a hornear a unos 180ºC alrededor de otros 20 minutos, y ya tenemos todos los pasos para completar la RECETA 2. Ahora, ¡a disfrutarla!

In the first image, I show you one of the salmon steaks we cooked for the New's Year Eve Dinner, and we needed a layer of pastry dough to wrap the piece. This time, I prepared three single-serving portions due to the fact I had three salmon fillets much slimmer (the result was delicious, too). Furthermore, if you don't have puff pastry dough, you can cook a simple baked salmon following the steps 1 and 2.

As you can see above, today I recommend you to watch a film where the salmon is the protagonist: "Salmon fishing in the Yemen", starred by Emily Blunt and Ewan McGregor, it is a pure delight.


Let's begin with the recipe:

Ingredients
- Fresh salmon (clean and boned)
- Dill
- Thyme
- Ground black pepper
- Lemon
- Salt
- Olive oil
- Puff pastry dough

1. Dress the salmon
Put the fillets on an oven tray with greaseproof paper, drizzle with olive oil (only a few drops), and cover them with the spices I have chosen (dill, thyme and ground clack pepper), and some lemon slices.

2. First baking
Bake the salmon into the oven preheated to 180ºC, but we should know that the bake time will depend on the size our fillets and, even, how we are going to prepared them (either only baked -more time- or wrapped in puff pastry dough -less time-). This time, I needed about 20-25 minutes to follow with all the steps to complete the recipe.

In this point, RECIPE 1 would be finished, so you shouldn't let salmon cool down and enjoy the food! But, if you want to wrap in puff pastry dough, it's better let it cool down to handle the fish easily.

3. Wrap salmon portions
Before wrapping the salmon, I cut the fillets in half in order to have portions thicker and more succulent, placing one over another. So that I put both pieces of salmon on the puff pastry dough as you can see in the pictures. Be aware that when you have finished to wrap the salmon, the joint of the dough must be on the underside.

4. Second baking
Lastly, bake the wrapped salmon again into the preheated oven at the same temperature for about 20 minutes. The RECIPE 2 is finished now! Enjoy it!

GUISANTES CON JAMÓN


Siempre que se comen guisantes (o chícharos) en mi casa, mi madre dice: "El guisante es la verdura más antigua conocida", y puesta a redactar la receta, se me ocurrió comprobar este dato buscando información en internet. De esta forma (y aunque descubrí que realmente pertenecen a la familia de las leguminosas), me enteré que se han encontrados restos fosilizados de guisantes en yacimientos arqueológicos del Próximo Oriente con más de 9.000 años de antigüedad, con lo que podríamos situar a los guisantes en el periodo Paleolítico. ¡¡Así que ella tenía razón!!

Y aunque no me quiero extender demasiado, y sin que sirva de precedente, quiero mostraros una imagen en la que se explica perfectamente el cuento "La princesa y el guisante" que fue escrito por Hans Christian Andersen. Si sentís curiosidad por como termina la historia de nuestro protagonista de hoy (el guisante) leed el cuento:

Y ahora sí, aquí está la receta:





Ingredientes
- Guisantes congelados
- Jamón serrano
- Cebolla
- Dientes de ajo
- Harina
- Sal
- Aceite de oliva

1. Cocer los guisantes
Pon en una olla agua a hervir, y añade un poco de sal antes de poner los guisantes a cocer. Como yo suelo utilizar guisantes congelados sigo el tiempo de cocción que indica el paquete. Una vez listos, se ponen a escurrir en un colador, pero reservamos el caldo para usarlo después.

2. Rehogar
Se pelan y pican a daditos, tanto la cebolla como 1 o 2 dientes de ajo, y se añaden en una sartén con un poco de aceite. Cuando estén doraditos, se añade una cucharadita de harina, se mezcla bien, y se incorporan los guisantes escurridos. A continuación, se le añade a toda la mezcla medio vaso del caldo que habíamos reservado; se remueve todo, y cuando comience a hervir, se deja todo unos tres o cuatros minutos. En este punto es donde añado el jamón serrano cortado a taquitos (y así no queda tan salado como si se fríe al mismo tiempo que la cebolla), y lo muevo todo antes de servir. ¡Disfruta de tus guisantes!

NOTA: Si te atreves puedes hacer la receta con guisantes frescos, porque aunque es más tarea, te alegrarás cuando los pruebes.

When my mother cooks peas, she always says: "Peas are the oldest and best-known vegetable", and for this reason, I decided to search in internet before editing this recipe. I have discovered that peas are legumes, and I have learnt too that fossilized remains of peas with over 9.000 years of history  (Paleolithic Period), have been found in the Middle East. So, she is right!

Now, and exceptionally, I have wanted to show an image above (illustrated by Karen Watson) that explain the tale "The princess and the pea" wrote by Hans Christian Andersen, because the peas are our main characters today.

Now, here's the recipe:

Ingredients
- Frozen peas
- Serrano ham
- Onion
- Garlic cloves
- Flour
- Salt
- Olive oil

1. Boil the peas
Follow the instructions to boil the frozen peas. Then, drain the peas in a sieve, but set apart the broth because it will be used later.

2. Fry lightly
Fry lightly a peeled and chopped onion and 1-2 garlic cloves in a pan with a little of olive oil. Then, sprinkle a spoonful of flour, stir all this together, and add the peas. Next, pour half a glass of broth; stir everything and leave to boil for 3 or 4 minutes. At that point, I add the serrano ham cut into dices (because the result is a less salty dish), and I mix all the ingredients before serving. Enjoy your peas!

NOTE: If you dare, you can make the recipe with fresh peas; you'll be glad when you taste them.

MENÚ SEMANAL 3

Hoy os traigo una tercera propuesta de menú semanal con la idea de que podáis ir mezclando estos platos diarios con los anteriores ya publicados, y no os aburráis comiendo siempre lo mismo en la oficina (como en ocasiones anteriores, incluyo los enlaces si las recetas o, parte de ellas, han sido ya publicadas en el blog).

TOSTAS DE BACALAO GRATINADAS





Ingredientes
- Bacalao ahumado
- Tomates cherry (opcional)
- Lactonesa o alioli
- Aceite de oliva
- Rebanadas de pan

1. Corta y coloca
Pon las rebanadas de pan sobre un papel sulfurizado en una bandeja de horno (en este caso he utilizado pan de centeno y pan cateto); ahora, rocíalas con un poco de aceite de oliva -sin que el pan se empape demasiado-, trocea el bacalao ahumado, corta en rodajitas los tomates y distribuye todos los trocitos sobre las tostadas.

2. Cubre
Es el turno de cubrir las tostadas con la salsa. Si no te acuerdas de las proporciones necesarias para preparar una buena lactonesa o un rico alioli, puedes consultarlo en este post.

3. Gratina
Por último, gratina las tostadas durante 20-25 minutos en el horno a unos 180ºC, sin dejar que el pan se queme. ¡Sorprenderás a tus invitados!

- Smoked cod
- Cherry tomatoes (optional)
- Mayonnaise (without eggs) or alioli
- Olive oil
- Bread slices

1. Cut & Place
Put the bread slices on a baking tray with a greaseproof paper (this time, I used rye bread and a typical bread from my country called "pan cateto"); now, add a sprinkle of olive oil on bread slices, cut into pieces the smoked cod, slice cherry tomatoes and place these ingredients on them.

2. Cover
It's the time to cover the bread with the sauce. To remember how to make mayonnaise (without eggs) or alioli, click here.

3. Cook au gratin
Lastly, cook au gratin the bread slices for 20-25 minutes at 180ºC, but don't let them burn. Your guests will be amazed!

MENÚ SEMANAL 2

Para aquellos a quienes les gustó o les inspiró mi primera propuesta de menú semanal para comer en la oficina, os dejo otra diferente para así, ayudaros con esta tarea que a veces nos deja sin ideas cuando estamos preparando el "rutinario tupper" (incluyo los enlaces si han sido ya publicadas en el blog).

PD: Como ya os dije, llevaros al menos una pieza de fruta (desde manzanas, naranjas o mandarinas, propias de esta época del año, a un pequeño racimo de uvas que, enjuagadas y secas, son fáciles de llevar en un recipiente de pequeño tamaño-) y algo para beber bajo en calorías.

PECHUGA DE PAVO AL AJILLO (receta de mi abuela)






Ingredientes
- Pechuga de pavo
- Dientes de ajo
- Vino blanco
- Sal
- Pimienta negra molida
- Hoja de laurel
- Aceite de oliva

Aunque la receta original (que hacía mi abuela y que actualmente sigue preparando mi madre) era con pollo entero con sus huesos y todo hecho a trozos, en este caso, lo he preparado con una pechuga de pavo cortada a filetitos; la única diferencia está en el tiempo que se necesita para freír la carne, y que quede doradita; éste es el primer paso de esta fácil receta.

1. Guisar la carne
Pon en una sartén honda o cacerola una cantidad de aceite suficiente para freír los filetes de pavo salpimentados; dales la vuelta para dorarlos por todos lados. Una vez listos, sácalos de la sartén y resérvalos en un plato aparte.

2. Ajos y vino
En el aceite anterior, añade ahora unos cuantos dientes de ajo (6-8) pelados y troceados; cuando se doren, añade la carne y una hoja de laurel, remueve, y agrega una buena cantidad de vino blanco (un vasito o un poco más). Mézclalo todo para que se vaya formando la típica salsa "al ajillo", y deja que se reduzca el vino y que la carne quede tierna. En este caso fue necesario con unos 12-15 minutos para terminar en plato, y el pavo quedó sabroso y muy jugoso. ¿A qué pensabais que era más complicado?

Ingredients
- Turkey breast
- Garlic cloves
- White wine
- Salt
- Ground black pepper
- Bay leaf
- Olive oil

Although the original recipe (what was cooked by mi grandmother in the past and, nowadays, my mother still prepares) was with whole chicken cut into pieces, in this case, I have prepared a turkey breast cut into fillets; you should know that the only difference is the time that the meat needs to be fried. And this is the first step of this easy recipe. 

1. Stew the meat
Fry the fillets of turkey breast (seasoned with salt and ground black pepper) in a deep pan or a saucepan with enough olive oil; make sure that turn to brow the meat on both sides. Then, remove them from the pan and set them aside.

2. Garlic and wine
Add about 6-8 (peeled and chopped) garlic cloves to the same oil where the meat was fried, and wait for being browned; the next step is to add the fillets and a bay leaf, stir, and pour one and a half glass of white wine. Mix all the ingredients and allow the alcohol of the wine is evaporated while the typical sauce "with garlic" is cooking and the meat makes tender. In this case, I need about 12-15 minutes to finish this tasty and juicy recipe. You thought that it would be more difficult, weren't you?
