PASTA AL PESTO DE RÚCULA Y PISTACHOS







Ingredientes (2 personas)
- Pasta (lacitos), 200 g
- Rúcula fresca, 30 g
- Pistachos pelados, 45 g
- Queso parmesano rallado, 35 g
- Diente de ajo
- Aceite de oliva
- Sal
- Pimienta

1. Pasta
Se cuece la pasta en abundante agua hirviendo con un poco de sal, pimienta en grano y una cucharadita de aceite. Cuando la pasta esté "al dente", la escurrimos y después la pasamos unos segundos bajo el grifo de agua fría  (para que quede suelta, y no se pegue).

2. Salsa pesto
Mientras se hace la pasta, preparamos la salsa pesto. En la batidora, añadimos la rúcula, los pistachos, el diente de ajo pelado y el queso parmesano rallado, y lo trituramos todo hasta obtener una crema homogénea. Como queda bastante espesa, agregamos un chorro generoso de aceite de oliva y un vasito del agua de cocción de la pasta y volvemos a triturar todo, de manera que obtenemos una salsa de consistencia más suave.

3. Rehoga y sirve
En una sartén, calentamos un poco de aceite y rehogamos la pasta junto con la salsa, para que se mezcle todo antes de servirla. Una vez en los platos, añadimos un poco de pimienta molida y unos pistachos extra para decorar. ¡Fácil y rico rico!

Ingredients (2 persons)
- Pasta (little bows), 200 g
- Fresh rocket leaves, 30 g
- Pistachios, 45 g
- Grated Parmesan cheese, 35 g
- Garlic clove
- Olive oil
- Salt
- Ground pepper

1. Pasta
Boil water and put in a little salt, peppercorns and a spoonful of olive oil before adding pasta. Stir and check every now and then until it is "al dente". Strain, at the same time provide cold water from the tap to pasta for some seconds to avoid sticking. 

2. Pesto sauce
While pasta is been cooked, you can make the pesto sauce. Blend together rocket leaves, pistachios, garlic clove and Parmesan cheese, until obtaining an homogenous cream. To lighten this cream, we pour a good amount of olive oil and a glass of the cooking water (where the pasta has been boiled) and we blend the mixture again, in order to get a more creamy sauce.

3. Fry lightly & serve
Fry lightly in a frying pan pasta and pesto sauce, with a little of olive oil, mixing all the ingredients. Once served, season with ground pepper and decorate with extra pistachios. Easy and tasty tasty!

EMBLANQUITO CALENTITO (receta malagueña)


Ingredientes
- 1 patata
- 1 cebolla
- 1 pimiento verde
- 1 tomate (opcional)
- 2 dientes de ajo
- Filetes de rosada sin piel (u otro pescado blanco)
- Zumo de limón
- Aceite de oliva
- Sal
- Pimienta negra en grano
- Agua


1. Cocer las hortalizas
Se lava y pela la patata, se corta a rodajitas medianas y las echamos en una olla junto con la cebolla (pelada y cortada en 2 o 4 trozos), el pimiento (limpio y cortado en 2 trozos), el tomate (enjuagado y entero, en caso de que vayamos a utilizarlo), los dientes de ajo pelados y unos granos de pimienta. Incorporamos el agua y lo ponemos todo a calentar. 

Mientras tanto (siguiendo el truco que usa mi madre para que el aceite se incorpore al caldo y no quede flotando en la superficie) exprimimos un limón, colamos el zumo y lo labramos con tres o cuatro cucharadas de aceite de oliva con ayuda de un tenedor. Así, cuando el agua empiece a hervir, añadimos un poco de sal y la mezcla de limón y aceite que acabamos de hacer, y removemos todo. Dejaremos que nuestro emblanco se vaya cocinando hasta que las patatas estén tiernas.


2. Cocer el pescado blanco
Después, se incorpora el pescado a nuestro caldo (los filetes de rosada son muy buena opción para este plato), y se dejará cocer entre 10-15 minutos según el grosor que tengan. Y ya está listo nuestro emblanco. Muy buena opción para quitarte el frío en las noches invernales o para ayudarte con problemas estomacales: ¡te reconfortará de todas, todas!

Ingredients
- 1 potato
- 1 onion
- 1 green pepper
- 1 tomato (optional)
- 2 garlic cloves
- Skinned white fish fillets
- Lemon juice
- Olive oil
- Salt
- Ground pepper
- Water


1. Cook the vegetables
First, clean, peel and slice the potato into rounds and place them in a pan together with the onion (peeled and cut into 2 or 4 pieces), the green pepper (cleaned and cut in half), the tomato (rinsed and whole, if we are going to consume it), the peeled garlic cloves and some ground peppers. Add the water and heat everything.

Meanwhile (following my mum's trick), squeeze a lemon, strain the juice and mix it well with 3 or 4 spoonfuls of olive oil with the help of a fork. Thus, when the water begins to boil, add a little of salt and the mixture of lemon-oil we have just made, and stir everything. Then, let the fish soup (called "emblanco") cook until the potatoes are soft.


2. Cook the white fish
After that, add the skinned white fish fillets to the pan, and let them boil between 10-15 minutes depending on the thickness. Our fish soup will be ready to be served. This dish is a very good option to drive out the winter chill or to help you when you have stomach problems. It will comfort you, absolutely!

PURÉ DE ZANAHORIAS CON COMINO





Ingredientes
- 1 puerro
- 1 cebolla
- 1 tomate maduro
- 5 zanahorias grandecitas
- 1 diente de ajo
- Agua
- Aceite de oliva
- Comino molido
- Sal
- Pimienta
- Vino de jerez (opcional)


1. Rehogamos y cocemos las verduras
Después de lavar, pelar y cortar las hortalizas que vamos a utilizar (puerro, cebolla, tomate y zanahorias), se echa un poco de aceite en la olla que vayamos a usar y se rehoga a fuego lento el puerro y la cebolla. Una vez blanditos, se añaden los trocitos de tomate, zanahorias, el ajo (pelado), sal y pimienta (al gusto) y se mueven todos los ingredientes unos minutos antes de añadir el agua necesaria para que cuezan nuestras verduras junto con media cucharadita de comino molido. Removemos, tapamos la cacerola y llevamos a ebullición. Una vez que empiece a hervir, bajamos el fuego y dejamos cocer nuestras hortalizas durante unos 30 minutos (hasta que estén tiernas).

2. Enfriar y batir
Es preferible dejar enfriar un poco nuestra sopa antes de triturarla en la batidora. Lo mejor es ir controlando la cantidad de caldo que vamos añadiendo para que nuestro puré tenga la consistencia deseada.

3. Opcional
Una buena idea es verter de nuevo este puré en la cacerola y añadirle un par de cucharadas de jerez. Al apartar, añadir un poco de pimienta molida y una pizca de comino por encima. ¡Os encantará si sois fanáticos de la comida sana!

- 1 onion
- 1 ripe tomato
- 5 large carrots
- 1 garlic clove
- Water
- Olive oil
- Ground cumin
- Salt
- Ground pepper
- Sherry wine (optional)


1. Lightly fry and boil the vegetables
After cleaning, peeling and cutting the vegetables we are going to use (leek, onion, tomato and carrots), we add a little of olive oil in the pan we are make use to cook, so that, first we lightly fry the leek and the onion. Then, once they are soft, we add the pieces of tomato, carrots, garlic love, salt and ground pepper to taste, and we stir everything before pouring the needed water to boil our vegetables together with half a teaspoonful of ground cumin. Stir again, cover the pan and bring to the boil. As the soup comes to the boil, we lower the heat and let vegetables cook slowly for about 30 minutes (until they are soft).

2. Cool down and blend carefully
The best way is to let the soup cool down before mashing. Keep in mind that it is necessary to control the quantity of broth we add to the mixer in order to obtain a mash with the desire texture.

3. Optional
It's a good idea, heat the mash again in the pan with a pair of spoonful of Sherry wine. Then, you can season with a little of ground pepper and a pinch of ground cumin on top before tasting it. I'm sure you will love, if you are healthy food consumers.

CREMA DE CALABACÍN




Ingredientes
- 1 puerro
- 1 patata (pequeñita)
- 2 calabacines
- Agua
- Aceite de oliva
- Sal
- Pimienta
- Margarina (opcional)
- Jamón cocido (opcional)


1. Rehogamos y cocemos las verduras
Después de lavar, pelar y cortar las tres verduras que vamos a utilizar (puerro, patata y calabacín), se echa un poco de aceite en la olla que vayamos a usar y se rehoga a fuego lento el puerro. Una vez que está blandito, se añaden los trocitos de patata y calabacín, sal y pimienta (al gusto) y se mueven todos los ingredientes unos minutos  antes de añadir el agua necesaria para que cuezan nuestras verduras.

2. Batir con cuidado
Una vez que la patata esté blandita, retiramos del fuego y pasamos a batir para obtener la crema de calabacín (con cuidado, para no quemarnos). Hay que tener en cuenta el ir controlando la cantidad de caldo que añadimos a la batidora para que la textura de la crema tenga la consistencia deseada.

Y ahora tenemos dos opciones: Si tenéis demasiada hambruna podéis tomar la crema tal cual, pero si podéis esperar unos minutos más, podéis rehogar en una cacerola un poco de jamón cocido con una "nuez" de margarina para después añadir la crema recién batida, removiéndola a fuego lento para que la margarina se integre perfectamente en el guiso. Con un poco de pimienta por encima, os quedará un plato sabroso y típico de invierno.

- 2 courgette
- Water
- Olive oil

- Margarine (optional)
- York ham (optional)


1. Lightly fry and boil the vegetables
After cleaning, peeling and cutting the three kind of vegetables we are going to use (leek, potato and courgette), we add a little of olive oil in the pan we are make use to cook, so that, first we lightly fry the leek. Then, once the leek is soft, we add the potato and courgette dices, salt and ground pepper to taste, and we stir everything before pouring the needed water to boil our vegetables.

2. Blend carefully
When the potato is cooked (soft), we remove the pot from the heat, and we use the mixer to form the courgette cream (be careful to avoid burns). Keep in mind that it is necessary to control the quantity of broth we add to the mixer in order to obtain the cream with the desire texture.

To finish there are two options: Obviously, if you are starving, you can delight the cream, but if you can wait some minutes, you can lightly fry York ham with a little of margarine in a pan, and then, the courgette cream should be added in it, stirring everything to integrate the flavour of the margarine in the dish. Season with a little of ground pepper on top, and it's time to enjoy this tasty and typical winter cream.
