SMOOTHIE DE MANGO Y FRESAS

Ingredientes
- Mango
- Fresas (congeladas)
- Yogur natural griego (sin azucarar)
- Miel
- Cubitos de hielo

Ingredients
- Mango
- Strawberries (frozen)
- Greek plain yoghurt (unsweetened)
- Honey
- Ice cubes

1. Blend everything
Add these ingredients in the glass of the mixer in order to make about 3 glasses of delicious smoothie: 1 mango (peeled and cut up into pieces), some frozen strawberries (150 g approximately), 2 Greek plain yoghurts and 1 teaspoon of honey. Blend until the smoothie becomes homogeneous, and then, add two ice cubes and blend again. Only, I'm saying to you that I have some strawberries in the freezer to repeat the recipe! It tasted superb!

TRICK: If we freeze pieces of fruit at optimal ripeness (strawberries, bananas, apples, ... -always peeled and cut into pieces-), we can use them to make our smoothies ever time we would have enough time to prepare them and, what is more important, to savour them. Furthermore, this makes our smoothie would be more refreshing and would have a right texture.

Based on the "Bi-coloured cookies" recipe posted by my aunt Ana on her own blog LOS SABORES DE ANA, I have made my own 1.0 version of cookies. I think I had inherited some talent for cooking from my family because some of them cook truly well, moreover this time was my first making  cookies and they were delicious. And, this isn't only my own opinion since many people had the opportunity to taste the butter biscuits and all they congratulated me for them.

Ingredients
- 10,6 oz. flour
- 3,2 oz. icing sugar
- 7,0 oz. butter (without salt)

1. Blend
First, mix inside a bowl flour and sugar. Next, melt butter over a low heat in a sauce pan; after that, pour it over the dry blend, and stir all the ingredients until obtaining an homogeneous mass. Wrap all the mass with cling film and let it cool down in the fridge for about 30 minutes (it will be easier to knead the mass).

2. Cut cookies
To knead easily the mass, it's better to take small ball of mass, while the rest of it is placed back in the fridge. The second trick is place this ball between two sheets of cling film, and roll out until get a thickness of about 0,5 cm. Remove the upper sheet, and use a cookies cutter (∅6 cm); then, put all the cookies on an oven tray with greaseproof paper. If you want to decorate the cookies, you can use either a knife or a cookie stamp (you can see the results in the pictures).

3. Baking
Bake them into the oven preheated to 180ºC for about 12 minutes. The butter cookies will be ready to be eaten, but it's better to let them cool down. It isn't possible to eat only one! They are irresistible!

IMPORTANT: As I promised, I dedicate this recipe to Elena, Dulce y Mai (they are three ex-workmates of my boyfriend), because they were loyal followers of my blog while they were working with him, and I hope that, nowadays, they still read my blog (even if I don't have enough time to update it). Good luck, Powerpuff Girls!

ATÚN CON PIMIENTOS

Ingredientes
- Atún (o bonito)
- Cebolla
- Tomate maduro
- Pimientos rojos y verdes
- Vino blanco
- Tomillo
- Laurel
- Sal
- Pimienta
- Aceite de oliva

1. Verduras

************************

Ingredients
- Tuna (or bonito)
- Onion
- Ripe tomato
- Green and red peppers
- White wine
- Thyme
- Bay leaf
- Salt
- Ground black pepper
- Olive oil

1. Vegetables
On the one hand, cut into strips the onion, and the red and green peppers (it will be more flavourful and more eye-catching because of the different colours); then, fry slightly in a pan with a little olive oil until onion is translucent.
On the other hand, peel the tomato and cut into dices (without seeds), add into the frying pan and mix all the ingredients.

2. Dressing & fish
Next, add a good glass of white wine, a handful of salt, ground black pepper and the aromatic herbs (thyme and a bay leaf), and leave everything to cook for about 15 minutes. Finally, add the fish fillets (tuna or bonito) and let the stew simmer for 10 minutes. It's a quick stew, delighful and colourful!

NOTA: If you like to dip your bread into the sauce, you should cover the frying pan while the stew is being cooked to avoid the evaporation.

Ahora, ¡a disfrutarla!

************************

In the first image, I show you one of the salmon steaks we cooked for the New's Year Eve Dinner, and we needed a layer of pastry dough to wrap the piece. This time, I prepared three single-serving portions due to the fact I had three salmon fillets much slimmer (the result was delicious, too). Furthermore, if you don't have puff pastry dough, you can cook a simple baked salmon following the steps 1 and 2.

As you can see above, today I recommend you to watch a film where the salmon is the protagonist: "Salmon fishing in the Yemen", starred by Emily Blunt and Ewan McGregor, it is a pure delight.

Let's begin with the recipe:

Ingredients
- Fresh salmon (clean and boned)
- Dill
- Thyme
- Ground black pepper
- Lemon
- Salt
- Olive oil
- Puff pastry dough

1. Dress the salmon
Put the fillets on an oven tray with greaseproof paper, drizzle with olive oil (only a few drops), and cover them with the spices I have chosen (dill, thyme and ground clack pepper), and some lemon slices.

2. First baking
Bake the salmon into the oven preheated to 180ºC, but we should know that the bake time will depend on the size our fillets and, even, how we are going to prepared them (either only baked -more time- or wrapped in puff pastry dough -less time-). This time, I needed about 20-25 minutes to follow with all the steps to complete the recipe.

In this point, RECIPE 1 would be finished, so you shouldn't let salmon cool down and enjoy the food! But, if you want to wrap in puff pastry dough, it's better let it cool down to handle the fish easily.

3. Wrap salmon portions
Before wrapping the salmon, I cut the fillets in half in order to have portions thicker and more succulent, placing one over another. So that I put both pieces of salmon on the puff pastry dough as you can see in the pictures. Be aware that when you have finished to wrap the salmon, the joint of the dough must be on the underside.

4. Second baking
Lastly, bake the wrapped salmon again into the preheated oven at the same temperature for about 20 minutes. The RECIPE 2 is finished now! Enjoy it!

When my mother cooks peas, she always says: "Peas are the oldest and best-known vegetable", and for this reason, I decided to search in internet before editing this recipe. I have discovered that peas are legumes, and I have learnt too that fossilized remains of peas with over 9.000 years of history  (Paleolithic Period), have been found in the Middle East. So, she is right!

Now, and exceptionally, I have wanted to show an image above (illustrated by Karen Watson) that explain the tale "The princess and the pea" wrote by Hans Christian Andersen, because the peas are our main characters today.

Now, here's the recipe:

Ingredients
- Frozen peas
- Serrano ham
- Onion
- Garlic cloves
- Flour
- Salt
- Olive oil

1. Boil the peas
Follow the instructions to boil the frozen peas. Then, drain the peas in a sieve, but set apart the broth because it will be used later.

2. Fry lightly
Fry lightly a peeled and chopped onion and 1-2 garlic cloves in a pan with a little of olive oil. Then, sprinkle a spoonful of flour, stir all this together, and add the peas. Next, pour half a glass of broth; stir everything and leave to boil for 3 or 4 minutes. At that point, I add the serrano ham cut into dices (because the result is a less salty dish), and I mix all the ingredients before serving. Enjoy your peas!

NOTE: If you dare, you can make the recipe with fresh peas; you'll be glad when you taste them.

TOSTAS DE BACALAO GRATINADAS

Ingredientes
- Bacalao ahumado
- Tomates cherry (opcional)
- Lactonesa o alioli
- Aceite de oliva
- Rebanadas de pan

1. Corta y coloca

¡Sorprenderás a tus invitados!

************************

Ingredients
- Smoked cod
- Cherry tomatoes (optional)
- Mayonnaise (without eggs) or alioli
- Olive oil
- Bread slices

1. Cut & Place
Put the bread slices on a baking tray with a greaseproof paper (this time, I used rye bread and a typical bread from my country called "pan cateto"); now, add a sprinkle of olive oil on bread slices, cut into pieces the smoked cod, slice cherry tomatoes and place these ingredients on them.

2. Cover
It's the time to cover the bread with the sauce. To remember how to make mayonnaise (without eggs) or alioli, click here.

3. Cook au gratin
Lastly, cook au gratin the bread slices for 20-25 minutes at 180ºC, but don't let them burn. Your guests will be amazed!
